Djej matisha mesla – Chicken tagine with onions and tomatoes
We often wrote about the recipes that are famous all around the world and are generally loved by lots of people. This time we decided to give you something more exotic, and even though this dish may seem weird to you, believe us, it’s incredible.
3 tablespoons of vegetable oil
1 kilogram of tomatoes ( tomatoes should be chopped and skinned )
¼ teaspoon of ground ginger
4 chicken quarters
2 teaspoons of ground cinnamon
½ teaspoon of saffron strands
2 tablespoons of clear honey
2 tablespoons of sesame seeds ( you can toast them if you want )
And salt and pepper, you choose the amount of it
You need to remember that this is a Moroccan dish, and that you should cook the chicken in the juice of fresh tomatoes and onions and it is sweetened at the end with honey.
Now heat the oil in a large pan, and fry the chicken along with onions until they become lightly browned. Add the tomatoes, spices and saffron and of course the salt and pepper if you want to.
Gently cook it, and turn chicken pieces over from time to time until the meat becomes soft and tender.
Remove the chicken and reduce the sauce to a thick sizzling cream. Stir until it starts to caramelize and just make sure it’s not burned. Stir in the honey, and then return the chicken to sauce.
Serve the chicken covered with sauce, and if you want to, you can sprinkle it with sesame seeds.
